Have you ever tried Paneer? Wondering what it is? Paneer is a fresh, non-melting cheese common in South Asian cuisine, in particular, North India. Made by curdling milk with an acidic ingredient like lemon juice or vinegar, it has a mild, milky flavour and a firm, spongy texture that allows it to hold its shape when cooked, making it ideal for absorbing the spices in curries and other dishes.

Being one of Sethi’s favourites, she has incorporated it into an Indian-fusion twist: the Paneer Makhani Pasty. Filling this savoury delicacy with marinated and sautéed paneer cubes, soaked in a creamy, spicy tomato sauce. From a young age, Sethi was influenced by the vibrant culture off Mumbai, where she was born. The roadside vendors led her away from the city’s madding and bustling streets. She recalls smelling the spices and meat, which were so alluring and appetising. The first bite of her first pasty officiated a lifelong passion for food from Mumbai.
In her twenties, Sethi moved to England. She began yearning for these delicacies from home. One day, whilst eating a Cornish pasty, she was taken by nostalgia. Instead of replicating what she was used to, Sethi experimented, fusing English and Indian cuisine. Her aim being to bring such gems from her native culture to England. To share the joy of what that first bite gave her. Before long, her efforts blossomed into what we know today as Sethi’s Kitchen.

There’s something quietly magical about the memory of biting into a warm, flaky patty from childhood days in India. Whether it was from the school canteen, a local bakery, or the neighborhood corner shop, patties were more than just a snack—they were tiny parcels of joy. Sahiba Sethi was born in Mumbai and grew up eating savoury puff pastries (esp. the mutton ones!) at Mumbai’s famous A1 Bakeries which has been around since the 1950’s. With her flair for cooking, she decided to turn a lifelong hobby into a kitchen dedicated to homemade goodness, which she now wants to share with the world!
